Pumpkin Fudge

This is one of my favorite recipes for the upcoming holiday; Thanksgiving.

I found the recipe on Allrecipes.com. However, I like to create a graham cracker layer on the bottom.

Ingredients:
  • 2 Tablespoons butter
  • 2 1/2 cups white sugar
  • 2/3 cup evaporated milk
  • 1 cup white chocolate chips
  • 7 ounces marshmallow creme
  • 3/4 cup canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups crushed graham crackers
  • 3 Tablespoons butter melted
Directions
  1. Combine crushed graham crackers and melted butter in a bowl
  2. Press graham cracker mixture into a lightly greased 9x9 inch pan
  3. Bake crust in a 350 degree oven for about 5 minutes so that the crust is set (lightly golden)
  4. In a 3 quart saucepan, heat milk and sugar over medium heat. Bring to a boil, stirring occasionally with a wooden spoon
  5. Mix in pumpkin puree and cinnamon; bring back to a boil. Stir in marshmallow creme and butter. Bring to a rolling boil. Cook, stirring occasionally for 18 minutes.
  6. Remove from heat and add white chocolate chips and vanilla. Stir until creamy and all chips are melted. Pour over graham cracker crust. 
  7. Cool, remove from pan and cut into squares
  8. Store in a cool dry place. Oh, and enjoy!

The Passion and the Start of a Story

I've been baking and cooking nearly all my life. I find great joy in sharing my love of flavors with others. My boyfriend suggested that I start putting this side of my creativity to use. So, here I am writing this blog. I hope to fill the pages with my own recipes and photos of my creations. I guess I should tell the story...

My parents bought a farm in the summer of 1990. It was only seven or so acres in the middle of no where. Previously, we were living in Goffstown NH, which is considered a suburb of Manchester NH. I don't remember much of the time prior to the farm other than I was now the oldest child of three. As a girl of five years, I loved it.

I move was not the horrible, but it was not the best. My dad's Chevy black van broke down as we were moving a load of furniture to the new house. I remember walking and walking.

The fields were warm and green. They were not the fake standard green of the city. They were ever changing between tints and shades of green. I would spend hours running through them each day with our dog Bonnie. I do remember laying in the sun one day and thinking that this was the life for me. Short lived dream. The next day I went with my mom to the local school to register for classes. However, my school life is another story.

The following year my dad began to grow a garden. We got some pigs and a few sheep. This is when the adventures began. It was so much like being with Peter Pan in Neverland.
